Tirokafteri (Spicy Feta Dip)

  • 1 lb feta (barrel-aged in brine is the ONLY way to go)
  • 1-15oz jar of roasted red peppers in water (drained)
  • 1 hot pepper, diced (add to your desired level of spice)
  • 2Tb Greek yogurt
  • 2 Tb extra-virgin olive oil
  • 2 Tb chopped parsley
  • Crushed red pepper flake (optional to taste)

 

Add feta, red peppers, yogurt, hot pepper, pepper flake and 1 Tb of oil to the bowl of your food processor and blend for about 45 seconds. Slowly drizzle in the last tablespoon of olive oil and pulse to incorporate. Add the chopped parsley and pulse again. Blend until you reach a smooth, thicker consistency, like hummus. It will seize up once you refrigerate it. Sprinkle with crumbled feta and serve with fresh pita or pita chips, toasted bread or veggies.
